Pumpkin Seed Mylk Recipe

It is of course my favorite time of the year, and have I mentioned how much I love pumpkin everything? Anyways did you know that raw pumpkin seeds are delicious and super nutritious? The raw green colored ones are the kind I get and they look more plump than the typical white ones you find in a carving pumpkin - so be careful you are buying raw organic seeds.

Pumpkin Seed Mylk can be used any which way you use dairy milk - with cereal, in recipes, or my favorite in smoothies. See my past recent post on Pumpkin Smoothie where this liquid fits in perfectly!

Pumpkin Seed Mylk

1-1/2 C. Raw Pumpkin Seeds

3 Cups Water

1 T. Vanilla extract

Pinch of Salt

1 T. Maple syrup (optional)

Place ingredients in blender and blend. Pour into a sieve and strain out water. That is it! I think you'll find that usually (depending on where you shop) this is a cheaper alternative to other milks and you dont have to waste buying it in a plastic carton. Win!
