Jicama Salad

What we put into our bodies affects our skin's health there is no doubt. Eating as much raw food as possible helps to provide the body and skin with essential nutrients that are not destroyed from the heating process. 
Have you tried Jicama before? It's grown in Mexico and it's kind of like a cross between a potato and an apple, and it tastes great raw! Here's one of my favorite lunch salads that includes this amazing vegetable. 

J I C A M A    S A L A D

Combine the following ingredients in large bowl:
1 peeled and diced jicama
3 stalks celery
green olives
1-2 red peppers

Dressing:
1/2 cup hemp seeds
1/4 cup water
1 clove garlic, pressed
1 lemon, juiced
salt to taste
1 tsp nutritional yeast
pinch of cayenne

Blend the dressing and pour over salad ingredients. Enjoy at room temperature. Bon appetite!
