Clean Lunching

Today's raw vegan lunch was inspired from a trip to the local Produce Place @produceplaceofsuntree which never seems to fail in getting my creative juices pumping with their constant change of seasonal selections. Pictured is a stuffed Cubanelle pepper filled with a garden pate (see recipe below). 

Clean eating is one of the BEST ways to care for yourself and to instantly feel and enjoy a healthy skin complexion. Yum yum bon apetite!

Stuffed Cubanelles

For the pate:

1 cup raw pumpkin seeds 

1/2 cup carrots

1/4 cup raw hemp seeds

1/4 cup sundried tomatoes

2 tablespoons tamari

1 tablespoon lemon juice

1 garlic clove

1/4 cup fresh cilantro

1 teaspoon sesame oil

Salt to taste

 Combine all ingredients in food processor and pulse until chunky. Scoop mixture into raw cubanelle peppers that have been sliced open and seeds removed. Drizzle with your favorite balsamic vinegar and serve! Bon Apetite!
